This is just about the prettiest punch you can make this holiday season.

Don’t you think?

It makes use of everything wintry and wonderful and worth celebrating: pomegranate (both the juice and the arils), mint leaves for a pop of festive color, Meyer lemons – which are seasonal and just.the.best, and champagne – a celebration in itself. Plus, it’s served in a punch bowl. Guys, this is pretty much a guaranteed good time.

We enjoyed this punch on Christmas Eve, but it would be equally great for New Year’s. It’s super-easy to make, and in addition to being absolutely gorgeous, everyone loved the flavors. It was refreshing, just sweet enough – and dangerously easy to drink.

Pomegranate-Champagne Punch

Adapted from Bon Appètit

  • 1/2 cup water
  • 1/2 cup sugar
  • 2 750-ml bottles chilled brut Champagne
  • 2 cups white rum
  • 2 cups pomegranate juice
  • 2 Meyer lemons, thinly sliced (or 1 large regular lemon if you can’t find Meyer lemons)
  • Pomegranate arils (seeds)
  • Fresh mint leaves
  • ice block

Bring 1/2 cup water and sugar to boil in small saucepan, stirring until sugar dissolves. Simmer 5 minutes. Cool syrup completely.

Combine Champagne, rum, and pomegranate juice in punch bowl. Add enough syrup to sweeten to taste. Mix in lemon slices, pomegranate seeds, and mint leaves. Add ice block to bowl.

    This is a tasty punch that looks stunning with the pomegranate seeds and is a cinch to make! Throw in the lemon right before serving so that they don’t soak up the pomegranate juice and turn pink.
