Oh… It’s a salad.
Yeah… I know what you’re thinking. Romaine, avocado, and red onion? Is that all?
B-O-R-I-N-G.
This salad isn’t rocket science – it’s true. But we all know what I’m about to say, don’t we? Here, now it’s your turn to be a know-it-all… That’s right: Simplicity isn’t a bad thing. Simplicity is good.
Also good? Discovering a simple way to lighten up any Latin-American or Mexican type of meal. This salad is crisp, light, and refreshing – making it a perfect match for anything heavy, cheesy, or fried…which are all three frequent characteristics of my favorite Mexican and Latin-American types of recipes.
A good meal requires balance, and that’s exactly what this salad brings to the table. Literally. Just add a squeeze of lime and a drizzle of extra-virgin olive oil, a little salt and pepper, and you’ve turned your super-fattening mexi/latin-feast into something respectable.
On that note, I’m off for a burrito.
